HOT FUDGE CAKE (aka. Chocolate Cobbler)

HOT FUDGE CAKE

I can’t tell you how good this Hot Fudge Cake taste.  The soft moist chocolaty cake with this creamy, delicious fudge sauce.  I have seen this cake called Chocolate Cobbler but I always think of cobbler as having a pie-like crust and I just can’t associate this piece of chocolate heaven with a cobbler.
If you would like to make this chocolate delight, you can get the recipe on my home and garden site - Sweet Southern Blue

GROWN UP SMORES

Grown Up Smores

Though I like the taste of smores, I never make them.  The chocolate doesn’t melt like I want it too and my marshmallows always catch on fire.  And if you are making them over a campfire then you are going to have goo everywhere.  Or maybe I’m just messy !
I have been eating marshmallow cream on my graham crackers since I was a kid. (I also have a friend who eats it on Ritz crackers ) I usually don’t even bother with the top cracker, I just smear it on one side and eat it but the other day I decided I wanted chocolate so I went to my pantry.

When I opened the door, I spied a jar of Nutella…BINGO !  I knew I had hit the jackpot because I love Nutella.  I guess this isn’t really a recipe so much as a combination of three delicious treats smushed together.  (graham crackers, marshmallow cream, and Nutella)

Old Fashioned Buttermilk Pie

buttermilk pie 2

Visiting family and friends during the holidays means good times, great food, and pecan or buttermilk pie (or both if your lucky).  It’s an old southern recipe and is a staple at many Thanksgiving or Christmas dinners.  I usually make two pies each time I bake, serving one and popping the other one in the freezer.  You can take it out ahead of time and let it thaw or if you are in a hurry, put it in the oven on low heat (around 170 degrees)  while you get ready.

You can find the recipe for this pie HERE.

MASCARPONE FROSTING ~ THE PERFECT TOPPING FOR ANY DESERT!

mascarpone frosting 2

This is my new favorite frosting.  It’s light and fluffy and holds up great.
I was looking for a frosting that would be great paired with an angel food cake.  Something that wasn’t overly sweet and had a light texture.  Something that was similar to whipped cream but I wanted it to be a frosting that would hold up when out at room temperature.  Maybe something with Mascarpone cheese.
I have seen recipes for years calling for mascarpone cheese and knew it wasn’t something I couldn’t get at my local Walmart (at least I have never found at my Walmart ) so I never tried it.  I was visiting my daughter in Hot Springs, AR and ran across some at Krogers and knew it was time to test out this cheese.  I threw it and some heavy whipping cream into my buggy and strolled to the deli to pick up an angel food cake.
You can get the recipe for this absolutely perfect frosting here at Sweet Southern Blue.

PEPPERMINT MOUSSE PARFAITS

Aren't these just the cutest little peppermint mousse parfaits?  My sister made these for a family gathering using these small 4 ounce cups.  The little parfaits were topped with peppermint sticks and  mini Oreo cookies that were  dipped in white chocolate and rolled in crushed peppermint.

You can check out the recipe HERE !

Butterscotch Cupcakes

Butterscotch brings back memories of my childhood and is a flavor that you don’t see much anymore.  We didn’t have many sweets in my house when I was growing  up (which is probably why I have such a sweet tooth now) so even getting a piece of hard candy was a treat.  We usually had cinnamon, peppermint, and butterscotch and butterscotch was always my favorite.  I just love the buttery sweet flavor so when I was debating about the type of cupcake I wanted to make, butterscotch seemed like a great choice.

Easter Rice Krispies Treats

The day after valentines day is one of my favorite days of the year. No, it’s not anyone’s birthday or major holiday, but it is the day they start putting out Easter candy. That means that the candy I wait all year long for is finally here. Those wonderful, sweet, crunchy, malted milk eggs are finally on the shelves for my enjoyment.

Peeps Rice Krispies Eggs

This is a fun recipe to make with the Kids. They are so easy and quick to make. The only problem I have with them is that they are so pretty that I don’t want to eat them. J They would  make a fantastic centerpiece for Easter.

Ingredients:
36 Peeps bunnies (3 different colors)
3 tablespoons butter
6 cups Rice krispies
a plastic Easter egg

Place 1 tablespoon of butter and 12 peeps (same color) in a glass bowl. Place in the microwave for about 1 minute or until all of the peeps are melted.  Stir until smooth. Fold in 2 cups of Rice Krispies.

Repeat process for the other two colors of peeps.

With all three colors ready, you will now start to put them together.

Wash and dry a plastic Easter egg. Spray with a little bit of cooking spray. (I only had to do this the first time.) Place a little bit of the Rice Krispies mixture from each bowl into the plastic egg.

Stuff the mixture into the egg, adding as much as needed to fill it up tightly.

Open up one end of the egg.

The take the Rice Krispie egg out.

Place the eggs on wax paper to set.
